Jill Winkler-Moser graduated from the University of Idaho with a B.S. and a M.S. in Food Science. Her Ph.D. research at the University of Illinois Urbana-Champaign in the Department of Food Science and Human Nutrition focused on the role of acyl carrier protein isoforms on the content and composition of Arabidopsis leaf and seed lipids. She has been a research chemist at the USDA ARS National Center for Agricultural Utilization Research in Peoria, IL since 2006. Her research focuses on lipid phytochemical analysis and the role of oil minor components on lipid quality and stability. She is the author of several book chapters and publications.
