Jean Louis S?b?dio

Jean-Louis Sébédio received his PhD from the university of Orsay, France in 1976 and his DSc from the University of Marseille in 1983. He is Director of Research at INRA, in Clermont-Ferrand and was the Director of the “Lipid Nutrition Unit” in Dijon from 1997 to 2004 where he carried out most of his work on the physiological effects of the compounds newly formed during heat treatment and frying of oils. He has also worked on the biological properties of conjugated fatty acids. His current main research interest is to develop a metabolomic approach in the field of human nutrition.

He has received awards for presentation of 'outstanding' papers at meetings of the American Oil Chemists' Society (AOCS), and in 2000 received the Herbert J. Dutton Award of the AOCS 'in recognition of his contribution to analytical methodology in the field of fats and oils’. He has authored and co-authored more than 200 original articles and book chapters in lipid analysis and nutrition.
